Veggie Pork Meatballs

Ingredients

  • 1lb ground sausage

  • 1/2 a bell pepper

  • 1/2 a zucchini

  • 1/2 tsp paprika

  • 1/2 tsp onion power

  • 1/4 tsp salt

  • 1/4 tsp black pepper


Other veggie options: carrots, spinach, broccoli, onions, cauliflower

Preparation

  1. Preheat oven to 400 degrees F.

  2. Chop the vegetables finely and place them in a bowl.

  3. Mix the ground pork and seasonings into the same bowl.

  4. Form the mixture into meatballs, wetting your hands to prevent sticking.

  5. Arrange the meatballs on a parchment-lined baking sheet.

  6. Bake for 15 minutes or until the internal temperature reaches 160 degrees F.

  7. Keep in an airtight container in the refrigerator for 3-5 days or freeze in a ziplock bag for up to 3 months.
