Ingredients
1lb ground sausage
1/2 a bell pepper
1/2 a zucchini
1/2 tsp paprika
1/2 tsp onion power
1/4 tsp salt
1/4 tsp black pepper
Other veggie options: carrots, spinach, broccoli, onions, cauliflower
Preparation
Preheat oven to 400 degrees F.
Chop the vegetables finely and place them in a bowl.
Mix the ground pork and seasonings into the same bowl.
Form the mixture into meatballs, wetting your hands to prevent sticking.
Arrange the meatballs on a parchment-lined baking sheet.
Bake for 15 minutes or until the internal temperature reaches 160 degrees F.
Keep in an airtight container in the refrigerator for 3-5 days or freeze in a ziplock bag for up to 3 months.
