Ingredients
Crust:
1+1/3 cups all purpose flour
1/3 cup flax meal
1 tsp baking powder
4 tbsps butter or coconut oil, melted
2 tbsps honey or maple syrup
1 egg or flax egg
Filling:
1 medium sweet potato, baked or steamed
2-3 small carrots, steamed
2 tbsps honey or maple syrup
cinnamon (optional)
Preparation
Preheat oven to 350 degrees F.
Add dry ingredients (flour, flax meal, baking power) into a bowl and mix.
In another bowl, whisk together honey, egg, melted butter or coconut oil.
Slowly add wet ingredients to dry ingredients and knead until it forms into a dough that is not sticky.
For filling, add sweet potato, carrots, and honey or maple syrup. Smash and mix.
Flour surface and roll dough into a rectangle. Add filling and fold over. Cut dough lengthwise using a sharp knife or pizza cutter. Carefully pinch ends to seal. A little water also helps seal the dough to itself.
Bake for 15 minutes and cool. Store in an airtight container in the refrigerator. I warm on low in my toaster oven or let them sit out in the counter for a bit.
Notes: I baked the sweet potato on 400 degrees F for 45-50 minutes until soft. I prefer to bake mine-it's sweeter to me that way! But you can also cut into cubes and. steam with the carrots! For the carrots, I steamed for 10 minutes.
