Sweet Potato Chili

Ingredients

  • 1lb ground beef

  • 2 small sweet potatoes, cubed

  • 1 small yellow onion, chopped

  • 1 15oz can diced tomatoes

  • 1 15oz can black beans, drained

  • 1 40z can green chilis

  • 1.5-2 cups chicken broth

  • taco seasoning packet

  • shredded cheese of choice for topping

Preparation

  1. In a large pot, add and saute yellow onion then add the ground beef.

  2. While ground beef is cooking, chop sweet potatoes into small bite cubes.

  3. Add sweet potatoes, tomatoes, green chilis, beans (drained), chicken broth, and taco seasoning packet into large pot with ground beef. Everything should be slightly covered in broth. Add more broth if needed.

  4. Bring to boil then let reduce heat. Cover and let simmer for 20-25 minutes until sweet potatoes are soft. Add salt if needed.

  5. Serve and sprinkle cheese of choice as a topping!
