Sweet Potato Apple Bars

Ingredients

  • 1 medium sweet potato

  • 1 small grated apple

  • 1/4 cup butter, melted

  • 2 cups self rising flour

  • 1 tsp cinnamon

  • (optional) melted chocolate or peanut butter for topping

Preparation

  1. Preheat oven 350F degrees.

  2. Combine all ingredients in a large bowl and combine.

  3. Sprinkle flour on counter and knead. If your mixture is too sticky, slowly add more flour.

  4. Spread dough on a 10x12, 9x13 baking dish.

  5. Bake for 15-20 minutes.

  6. Let cool and add melted chocolate or peanut butter.

  7. Cut into bars.


Notes: I recommended poking holes on the sweet potatoes, slightly covering in olive oil and baking for 40-45 mins. They are sweeter that way. If you don't have time to bake beforehand, you can microwave them for about 5-10 minutes.
