Strawberry Oat Squares

About the Recipe

Ingredients

  • 1 cup all purpose flour

  • 1 cup rolled oats

  • 1/4 teaspoon salt

  • 1/2 teaspoon baking soda

  • 1 stick of butter (125g), melted

  • 3-4 tablespoons honey

  • 1 teaspoon vanilla extract

  • 1 cup strawberry jam


For homemade strawberry chia jam:

  • 2 cups strawberry, fresh or frozen

  • 1 tablespoon water

  • 1-2 tablespoon chia seeds

  • squeeze of lemon juice

  • 1 tablespoon of honey for some extra sweetness


Preparation

  1. Preheat oven to 350 degrees F and line an 8x8 baking dish with parchment paper.

  2. In a large bowl, add flour, oats, salt, and baking soda. Mix.

  3. In a small bowl, add melted butter, vanilla, and honey. Mix.

  4. Add the wet ingredients to the dry ingredients and combine.

  5. Add about 3/4 of the mixture to the baking dish and press firmly to form bottom crust.

  6. Bake for 10-13 minutes until golden brown.

  7. After baking, add the strawberry jam and spread evenly.

  8. Sprinkle the rest of the crumble mixture on top of the jam.

  9. Bake for 10-15 minutes until golden brown.

  10. Let it cool for 30-45 minutes before slicing into squares.

  11. Store in an airtight container in the fridge.


For homemade strawberry chia jam:

  1. Add strawberries, water, and chia seeds to a pan over medium-high heat.

  2. Break down with a fork or potato smasher.

  3. Add honey and lemon juice and stir. Let cook for 5 or so minutes.

  4. Remove from heat and let cool. It will continue to thicken as it cools.
