Ingredients
1 cup all purpose flour
1 cup rolled oats
1/4 teaspoon salt
1/2 teaspoon baking soda
1 stick of butter (125g), melted
3-4 tablespoons honey
1 teaspoon vanilla extract
1 cup strawberry jam
For homemade strawberry chia jam:
2 cups strawberry, fresh or frozen
1 tablespoon water
1-2 tablespoon chia seeds
squeeze of lemon juice
1 tablespoon of honey for some extra sweetness
Preparation
Preheat oven to 350 degrees F and line an 8x8 baking dish with parchment paper.
In a large bowl, add flour, oats, salt, and baking soda. Mix.
In a small bowl, add melted butter, vanilla, and honey. Mix.
Add the wet ingredients to the dry ingredients and combine.
Add about 3/4 of the mixture to the baking dish and press firmly to form bottom crust.
Bake for 10-13 minutes until golden brown.
After baking, add the strawberry jam and spread evenly.
Sprinkle the rest of the crumble mixture on top of the jam.
Bake for 10-15 minutes until golden brown.
Let it cool for 30-45 minutes before slicing into squares.
Store in an airtight container in the fridge.
For homemade strawberry chia jam:
Add strawberries, water, and chia seeds to a pan over medium-high heat.
Break down with a fork or potato smasher.
Add honey and lemon juice and stir. Let cook for 5 or so minutes.
Remove from heat and let cool. It will continue to thicken as it cools.
