Strawberry Bars

Ingredients

Dough:

  • 1 and 1/4 cup all purpose flour

  • 1/4 cup ground flax meal*

  • 2 tbsps coconut sugar*

  • 1 tsp baking powder

  • pinch of salt

  • 6 tbsps cold butter

  • 1 egg

  • 1 tsp vanilla extract


Strawberry Jam: (or use store bought!)

  • 2 cups stawberries

  • 1/4 cup honey

  • 2 tbsps lemon juice


Notes:

*flax meal can be replaced with oats or more flour

*coconut sugar can be replaced with regular white sugar

*I used a food processor/stand mixer but a bowl and hand kneading works too!

Preparation

Dough:

  1. In a food processor (or stand mixer) with a dough attachment, mix together flour, sugar, baking powder, and salt until well combined.*

  2. Add the cubed cold butter and pulse until the mixture becomes crumbly.

  3. Incorporate vanilla extract and egg until the dough forms a ball.

  4. Preheat the oven to 350 degrees F.

  5. Lightly flour your work surface and roll the dough into a rectangle. Trim any excess to shape the dough. Spread jam at one end, fold that end over, and cut the dough slightly beyond the fold. Slice the log into 3-4 bar-sized pieces, gently open the ends so the jam settles, and pinch each end to seal.

  6. Place parchment paper on a baking sheet and arrange the bars about 2 inches apart.

  7. Bake for 15-17 minutes. Allow to cool and store in an airtight container in the fridge.


Strawberry Jam:

  1. Combine strawberries, honey, and lemon juice in a medium saucepan.

  2. Heat on medium-high and bring to a boil.

  3. Mash the strawberries while stirring, and keep boiling until the jam thickens, approximately 10-15 minutes.

  4. Pour the jam into a jar and allow it to cool to room temperature.
