Ingredients
Dough:
1 and 1/4 cup all purpose flour
1/4 cup ground flax meal*
2 tbsps coconut sugar*
1 tsp baking powder
pinch of salt
6 tbsps cold butter
1 egg
1 tsp vanilla extract
Strawberry Jam: (or use store bought!)
2 cups stawberries
1/4 cup honey
2 tbsps lemon juice
Notes:
*flax meal can be replaced with oats or more flour
*coconut sugar can be replaced with regular white sugar
*I used a food processor/stand mixer but a bowl and hand kneading works too!
Preparation
Dough:
In a food processor (or stand mixer) with a dough attachment, mix together flour, sugar, baking powder, and salt until well combined.*
Add the cubed cold butter and pulse until the mixture becomes crumbly.
Incorporate vanilla extract and egg until the dough forms a ball.
Preheat the oven to 350 degrees F.
Lightly flour your work surface and roll the dough into a rectangle. Trim any excess to shape the dough. Spread jam at one end, fold that end over, and cut the dough slightly beyond the fold. Slice the log into 3-4 bar-sized pieces, gently open the ends so the jam settles, and pinch each end to seal.
Place parchment paper on a baking sheet and arrange the bars about 2 inches apart.
Bake for 15-17 minutes. Allow to cool and store in an airtight container in the fridge.
Strawberry Jam:
Combine strawberries, honey, and lemon juice in a medium saucepan.
Heat on medium-high and bring to a boil.
Mash the strawberries while stirring, and keep boiling until the jam thickens, approximately 10-15 minutes.
Pour the jam into a jar and allow it to cool to room temperature.
