Honey Oat Bars

Ingredients


  • 2 1/2 cups quick oats

  • 1/4 cup coconut sugar

  • 1/4 cup coconut oil, melted

  • 1/4 cup honey


(this recipe makes 8 bars)

*instead of quick oats, you can use rolled oats and just lightly blend them

Preparation

  1. Set the oven to 375 degrees and preheat.

  2. Combine quick oats and coconut sugar in a large bowl and mix well.

  3. Incorporate melted coconut oil and honey into the same bowl, mixing gently.

  4. Line an 8x8 baking dish with parchment paper, add the mixture, and press it down firmly. Pressing firmly helps reduce crumbliness.

  5. Bake for 10-15 minutes or until the top is lightly golden brown.

  6. Allow to cool for 20 minutes before slicing into 8 bars while still slightly warm. Let them cool completely before storing. They will firm up more as they cool. Store in an airtight container in the fridge, and if they are too hard or cold, let them sit for 5 minutes before eating.
