Ingredients
Recipe for about 2 jars of sauce:
1/2 medium onion
1 small garlic clove
2 celery stalks
1 carrot
1 bell pepper
1/2 zucchini
1/2 cup broth (chicken, veggie, or bone)
28oz can of crushed tomatoes
1 tsp Italian seasoning
1/2 tsp sea salt
2 tbsps olive oil
Preparation
Finely dice all the vegetables.
In a large saucepan, combine olive oil, the chopped vegetables, and Italian seasoning. Cover and cook for approximately 15-20 minutes, stirring occasionally.
Add crushed tomatoes and broth. Bring to a boil, reduce to low and let simmer on low for another 15-20 minutes.
Add to a blender and blend until desired consistency. Taste and season accordingly.
Let cool and pour into a ziplock bag or container. I love this for freezing soups and bulk sauces.
(Optional) Add heavy whipping cream, coconut milk, etc to make it creamy!
