Hidden Veggie Pasta Sauce

Ingredients

Recipe for about 2 jars of sauce:

  • 1/2 medium onion

  • 1 small garlic clove

  • 2 celery stalks

  • 1 carrot

  • 1 bell pepper

  • 1/2 zucchini

  • 1/2 cup broth (chicken, veggie, or bone)

  • 28oz can of crushed tomatoes

  • 1 tsp Italian seasoning

  • 1/2 tsp sea salt

  • 2 tbsps olive oil

Preparation

  1. Finely dice all the vegetables.

  2. In a large saucepan, combine olive oil, the chopped vegetables, and Italian seasoning. Cover and cook for approximately 15-20 minutes, stirring occasionally.

  3. Add crushed tomatoes and broth. Bring to a boil, reduce to low and let simmer on low for another 15-20 minutes.

  4. Add to a blender and blend until desired consistency. Taste and season accordingly.

  5. Let cool and pour into a ziplock bag or container. I love this for freezing soups and bulk sauces.

  6. (Optional) Add heavy whipping cream, coconut milk, etc to make it creamy!
