Ingredients
1 lb ground chicken
2 small carrots, finely chopped
1 cup cauliflower, finely chopped
1-2 garlic cloves, finely chopped
1/2 tsp salt
1/2 tsp onion power
1 tsp paprika
Almond flour
Breadcrumbs
Preparation
Preheat oven to 400 F.
Add cauliflower, carrots, and garlic into the food processor, and process until finely chopped.
In a separate bowl, add ground chicken, chopped veggies, and seasonings. Mix and combine.
In a smaller bowl, add an equal ratio of breadcrumbs and almond flour.
Form into nuggets and coat into almond flour/breadcrumb mixture.
Arrange in a single layer on the prepared baking sheet.
Lightly cover tops with olive oil.
Bake for 10 minutes, flip, lightly cover with oil, and bake for another 10 minutes until golden brown.
Let cool and store in an airtight container or ziplock bag if freezing.
