Greek Yogurt Chocolate Chip Muffins

About the Recipe

Ingredients

  • 1.5 cups of all purpose flour

  • 1/4 cups of ground flax seed

  • 1 cup greek yogurt

  • 1 tsp baking power

  • 1/2 tsp baking soda

  • 1/4 cup melted butter

  • 1/2 cup maple syrup

  • 2 eggs

  • 1 cup mini chocolate chips (optional)


Preparation

  1. Preheat oven to 350 degrees F.

  2. In a large bowl, add all ingredients except chocolate chips and combine.

  3. Add in chocolate chips and gently mix.

  4. Grease a mini muffin tin with butter or oil.

  5. Add batter to muffin tin.

  6. Bake for 15 minutes and let cool for 5 minutes before removing muffins from muffin tin.


If freezing, add to a ziplock or reusable bag. I take what I need and warm up them up in the microwave for 20-30 seconds or a few minutes in the toaster oven.
