About the Recipe

Ingredients
1.5 cups of all purpose flour
1/4 cups of ground flax seed
1 cup greek yogurt
1 tsp baking power
1/2 tsp baking soda
1/4 cup melted butter
1/2 cup maple syrup
2 eggs
1 cup mini chocolate chips (optional)
Preparation
Preheat oven to 350 degrees F.
In a large bowl, add all ingredients except chocolate chips and combine.
Add in chocolate chips and gently mix.
Grease a mini muffin tin with butter or oil.
Add batter to muffin tin.
Bake for 15 minutes and let cool for 5 minutes before removing muffins from muffin tin.
If freezing, add to a ziplock or reusable bag. I take what I need and warm up them up in the microwave for 20-30 seconds or a few minutes in the toaster oven.
