Ingredients
1 egg
1/2 cup unsalted butter, softened
2 tbsp maple syrup
1/2 cup coconut sugar (or brown sugar)
3 tbsp molasses
1 tsp vanilla extract
2 and 1/4 cups all purpose flour
1.5 tbsp ground cinnamon
1.5 tsp ground ginger
1/4 tsp cloves
1/2 tsp baking soda
pinch of salt
Preparation
In large bowl, add all the wet ingredients and beat with an electric mixer or stand mixer until smooth and creamy.
In the same bowl, add all the dry ingredients and combine with a dough whisk (or stand mixer) until dough forms. Make sure to measure flour correctly-do not pack it.
Wrap the dough in a wax or plastic wrap and let the dough chill in the fridge for at least 30 minutes.
Preheat oven to 350 and line a cookie sheet with parchment paper.
Flour your surface and rolling pin and roll out your dough to about 1/4 inch thick.
Using cookie cutters, carefully cut out shapes in the dough.
(optional) Place cookies in the fridge to chill before baking for about 10 minutes while you gather excess dough and repeat steps 5 and 6 to form more cookies.
Bake cookies for about 8-10 minutes and let cool for 10 minutes. Store in an airtight container on the counter for about 4-7 days.
