Fig Bars

Ingredients

Filling:

  • 1 cup dried figs

  • 2 tbsps honey

  • 1 tsp vanilla extract


Dough:

  • 6 tbsps butter, room temperature

  • 1/4 cup sugar

  • 1 egg

  • 1 tsp vanilla extract

  • 1.5 cups all-purpose flour

Preparation

  1. Preheat oven to 350 degrees F.

  2. (skip if using store-bought fig spread) Soak dried figs in hot/boiling water for 15 minutes.

  3. In a large bowl, use a handheld mixer to cream together the butter and sugar until light and fluffy. Add the egg and vanilla extract and mix.

  4. In the same bowl, slowly incorporate the flour. With a wooden spoon or hands, mix until dough forms.

  5. Flour your surface and rolling pin. Roll out dough to form a long rectangle.

  6. (skip if using store-bought fig spread) Drain water from figs. Add figs, honey, and vanilla extract to a blender until paste forms.

  7. Add paste to one side of the dough, Avoid edges to be able to seal. Gently fold in half and lightly pinch where the two sides meet to seal.

  8. Using a pizza cutter, cut into 10 larger bars or 20 smaller bars.

  9. Bake for 15-18 minutes until lightly golden.
