Ingredients
1.5 cups of all-purpose flour
1/4 cup sugar
1.5 tsp baking powder
5 tbsps melted butter
1 egg, room temp
1 tsp vanilla extract
1/2 cup warm milk
Cinnamon Sugar Mixture:
1/3 cup sugar
1 tsp cinnamon
Preparation
Preheat oven to 350°F.
Combine all the dry ingredients in a large bowl.
Pour in melted butter, a beaten egg, and milk, and stir until just mixed. Avoid over-mixing.
Bake for 13-15 minutes or until a toothpick inserted into the center comes out clean.
In a small bowl, mix sugar and cinnamon for the topping.
Briefly dip or brush the warm muffin tops with melted butter, then coat them generously with cinnamon sugar. Place them on a wire rack to cool.
Keep in an airtight container on the counter, in the fridge for 5 days, or freeze in a ziplock bag for about 3 months.
