Cinnamon Sugar Muffins

Ingredients

  • 1.5 cups of all-purpose flour

  • 1/4 cup sugar

  • 1.5 tsp baking powder

  • 5 tbsps melted butter

  • 1 egg, room temp

  • 1 tsp vanilla extract

  • 1/2 cup warm milk


Cinnamon Sugar Mixture:

  • 1/3 cup sugar

  • 1 tsp cinnamon

Preparation

  1. Preheat oven to 350°F.

  2. Combine all the dry ingredients in a large bowl.

  3. Pour in melted butter, a beaten egg, and milk, and stir until just mixed. Avoid over-mixing.

  4. Bake for 13-15 minutes or until a toothpick inserted into the center comes out clean.

  5. In a small bowl, mix sugar and cinnamon for the topping.

  6. Briefly dip or brush the warm muffin tops with melted butter, then coat them generously with cinnamon sugar. Place them on a wire rack to cool.

  7. Keep in an airtight container on the counter, in the fridge for 5 days, or freeze in a ziplock bag for about 3 months.
