Ingredients
1 small zucchini, grated
2 eggs
1/3 maple syrup or honey
2/3 cups unsweetened applesauce
3 tbsps avocado or olive oil
2 tsps vanilla extract
1 1/4 cups whole wheat flour
1/4 unsweetened cocoa powder
1 tsp baking powder
1/2 tsp baking soda
1/3 cup mini chocolate chips
Preparation
Preheat oven to 375 degrees F.
Grate zucchini and squeeze out excess liquid from the zucchini with a cheesecloth or paper towel. Dispose liquid.
In a large bowl, add drained zucchini, eggs, maple syrup, applesauce, oil, vanilla extract and mix.
In the same bowl, add in flour, cocoa powder, baking powder, and baking soda and mix until combine. Don't over mix.
Fold in chocolate chips in the batter.
Butter or oil a mini muffin pan and add batter.
Bake for 13-16 minutes, or insert a toothpick into the center until it comes out clean.
Keep them in an airtight container on the counter for a few days or store them in the fridge. They also freeze well in a ziplock bag!
