Chicken Veggie Pinwheels

Ingredients

  • 1lb ground chicken

  • 1 tsp paprika

  • 1 tsp garlic power

  • 1 tsp onion powder

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • 1 large broccoli crown, steamed

  • Puff pastry, thawed

  • 2-3 tbsps cream cheese, room temp

  • 1/2 cup cheddar cheese


Preparation

  1. Preheat oven to 350. Set out 1 sheet of puff pastry if frozen to thaw.

  2. Cook ground chicken and add seasonings.

  3. Steam broccoli until soft. Typically 5-8 minutes.

  4. Chop up broccoli into smaller pieces. Save remaining broccoli for another use. 

  5. Roll out puff pastry. Spread cheese cheese all over. Sprinkle with the ground chicken, broccoli and shredded cheese. Roll up pastry dough to create a log. Cut the log into pinwheels.

  6. Place the pinwheels on a prepared baking sheet or slightly oiled muffin pan.

  7. Bake for 15-20 minutes.

  8. Freeze remaining ground chicken and broccoli in a reusable or ziplock bag to save time next time. Good in freezer for up to 3 months.
