Ingredients
3 ripe bananas (about a cup, mashed)
2 eggs
1/4 cup cup oil or butter (melted)
1/4 cup maple syrup or honey
1/4 cup milk
1 tsp vanilla extract
1 1/2 cup whole wheat flour
1 tsp baking soda
1 tsp cinnamon
2/3 cup walnuts, crushed
Preparation
Preheat oven to 350 degrees F.
In a large bowl, add bananas and mash them. Add the wet ingredients to the bowl (oil/butter, maple syrup/honey, milk, eggs, vanilla extract) and whisk.
Add the dry ingredients to the same bowl (flour, baking soda, cinnamon) and gently mix.
Add the crushed walnuts to the batter and combine.
Butter/oil a mini muffin pan and pour batter.
Bake for 15 minutes.
Let cool and freeze in an airtight container or ziplock bag. Warm them up in the microwave or toaster oven.
