Banana Nut Muffins

About the Recipe

Ingredients

  • 3 ripe bananas (about a cup, mashed)

  • 2 eggs

  • 1/4 cup cup oil or butter (melted)

  • 1/4 cup maple syrup or honey

  • 1/4 cup milk

  • 1 tsp vanilla extract


  • 1 1/2 cup whole wheat flour


  • 1 tsp baking soda

  • 1 tsp cinnamon

  • 2/3 cup walnuts, crushed



Preparation

  1. Preheat oven to 350 degrees F.

  2. In a large bowl, add bananas and mash them. Add the wet ingredients to the bowl (oil/butter, maple syrup/honey, milk, eggs, vanilla extract) and whisk.

  3. Add the dry ingredients to the same bowl (flour, baking soda, cinnamon) and gently mix.

  4. Add the crushed walnuts to the batter and combine.

  5. Butter/oil a mini muffin pan and pour batter.

  6. Bake for 15 minutes.

  7. Let cool and freeze in an airtight container or ziplock bag. Warm them up in the microwave or toaster oven.
